I have another instant ramen upgrade for you! This time it's sesame garlic ramen noodles, an Asian noodle dish. It's fast, easy, economical, and made with simple everyday ingredients. It hardly takes 10 minutes to put together, making it a quick, light lunch or dinner.
Cooked ramen noodles stir-fried with aromatics and a flavorful sauce all come together to create a restaurant-worthy dish that tastes delicious as it is or with a protein or vegetarian food of choice.
I love quick meals, and this recipe perfectly fits the bill. Fresh garlic, green onion, and toasted sesame seeds make these noodles pop. And the sauce is just the perfect blend of salty, sweet, and umami.

Sesame Garlic Ramen Noodles Ingredients
Here are a few important notes about the ingredients. For measurements see the recipe card below.
Making sesame garlic noodles is incredibly easy if you prepare all ingredients at your fingertips before turning on the stove.
Here is what you will need to make this recipe:
- Noodles: Use any ramen noodles or instant noodles you have. Flavor does not matter as we are not using the seasoning packet. I used two packs of dried ramen noodles; if using more than two, increase the rest of the ingredients accordingly.
- Other noodles like soba, udon, or linguine are some of my favorites for this recipe. Cook them according to package instructions.
- Sesame oil and sesame seeds:The earthy sesame flavor of garlic sesame noodles comes from sesame oil and toasted sesame seeds. I highly recommend not skipping these. Sesame oil can be found in most Asian grocery stores. Just be sure to use authentic sesame oil.
- Green onion (or scallion) and garlic: for the main flavor base. Fresh aromatics yield the best result. If you want the recipe to be more garlicky, you could add more garlic;
- Chili flakes/coarse red chili powder: for a little kick and flavor. I used ½ teaspoon of chili flakes, but please feel free to adjust the heat based on your preference. OR sub with chili garlic sauce or sriracha;
- Light soy sauce, oyster sauce, cornstarch (optional) and water: We will combine these for the sauce. Use cornstarch for a saucy noodles. Oyster sauce adds the right flavor. I used the vegetarian oyster sauce for this recipe, but you can use the regular kind. If you don't have any oyster sauce, swap it with the same amount of soy sauce and a teaspoon of brown sugar or maple syrup instead. The taste will change a bit, but it will still be tasty;
How to make Sesame Garlic Ramen Noodles
Toast sesame seeds:
- Toast the sesame seeds in a pan over medium heat, stirring continuously (as they can burn quickly); Once they turn golden, transfer them to a bowl.
Prep the sauce:
- Whisk together soy sauce, oyster sauce, water, and cornstarch (if adding) until blended in a bowl and set aside.
Cook the ramen:
- Heat water in a pot and bring the water to boiling hot.
- Add ramen noodles and cook as per the package instructions; Once done, drain them using a colander and set them aside.
Stir fry ramen:
- Heat sesame oil in a pan; Set the flame to low and add white parts of the green onion and minced garlic; Saute for a minute.
- Add chili flakes and stir to mix.
- Add the prepared sauce and simmer until the sauce slightly thickens.
- Add the cooked ramen noodles and stir gently to coat well in the sauce.
- Add scallion greens and toasted sesame seeds; Give it a quick mix and serve hot. ENJOY!

- 2 cakes dry instant ramen noodles 140 g
- 2 tablespoon sesame oil
- 2 green onion (or scallion) stalks thinly sliced (keep the green and white parts separate)
- 5 garlic cloves minced
- ½ teaspoon chili flakes/coarse chili powder
- 2 tablespoon white sesame seeds
For the sauce
- 2 tablespoon light soy sauce
- 1 tablespoon oyster sauce (I used vegetarian oyster sauce)
- 1 teaspoon cornstarch (optional)

I love ramen and this recipe sounds terrific. However, I am allergic to shellfish and cannot use oyster sauce. You mentioned you used vegetarian oyster sauce. What brand and where can I find it in stores?

Way too much sesame oil. We could not eat it. It might be good without the sesame oil or maybe cut by 75%

Very good. I added about a tablespoon of brown sugar to the sauce. Also added cooked chicken cut up. Next time I will also add some sort of vegetable too.
