Strawberry Jello Sugar Cookies to be exact! That’s right….strawberry Jello mix is used to make these strawberry cookies. But the fun thing about this recipe is you can use any flavor of gelatin that you like! Add chocolate chips, white chips, sprinkles or whatever goes with your flavor of Jello that you use to flavor your cookies. The flavor combos are endless…and you can bet there will be a few more Jello Sugar Cookie recipes coming to the blog soon!So how fun are these Jello Sugar Cookies?! I love that there are so many flavors of Jello to experiment with! The strawberry cookies were such a pretty shade of pink, so of course I had to roll them in more pink sprinkles. Wouldn’t these cookies be perfect for a bridal shower, little girls party or baby shower? I totally brought them into work and fed them to a roomful of men though during our monthly FTO meeting hahaha. They loved them too!

Roll your cookies in any kind or sprinkles you have or even just granulated sugar! I chose sprinkles of course….then we bake!

Jello Sugar Cookies

Serves: 33 Cooking Time: 10-minutes

Ingredients

  • 3/4 cup unsalted butter, room temperature
  • 1-1/2 cups granulated sugar
  • 1/4 cup powdered sugar
  • 1 (3-ounce) box gelatin- just the dry mix (I used strawberry flavored)
  • 3 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1-1/2 teaspoons strawberry extract (omit if not using strawberry flavored gelatin)
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • TOPPING:
  • Sprinkles or granulated sugar

***COOKIE DOUGH NEEDS TO CHILL FOR 1-HOUR PRIOR TO BAKING***

In the bowl of your stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until smooth and creamy. Add the granulated sugar, powdered sugar and dry gelatin mix to the butter and mix on low until combined, then increase the mixer speed to medium until the mixture is light and fluffy. Add the eggs one at a time to the batter, mixing each egg in fully before adding the next egg. Add the vanilla extract and strawberry extract (if making strawberry cookies). Change the mixer speed to low and add the flour, baking powder and salt. Mix until just combined.

Pour the cookie dough out onto a piece of plastic wrap, cover the dough and place in the refrigerator to chill for one hour.

Once dough has chilled, preheat the oven to 375-degrees and line three cookie sheets with parchment paper. Use a standard sized cookie scoop to scoop cookie dough balls. Roll the balls in a bowl of sprinkles or sugar and place on cookie sheet. Bake cookies, one cookie sheet at a time, for 9-10 minutes or until the center is set.

Notes

These cookies are even better the second day when the flavors have had a chance to marry! Store at room temperature in an airtight container.

James took a few of these cookies to work and one of the guys described them as “if a donut and a cookie had a baby this is what it would turn into to.” Hahaha. Love it!

    That’s awesome, Kelly! It will feel so good to finish, won’t it? But I’ll miss your regular posting. . .I’ll have to bake a batch of these cookies to make myself feel better, haha. They’re so fun and I love that I can switch out the flavor of jello!

    Kelly, Can I just tell you that you have so much energy! That is so impressive that you are going back to school in your “spare” time.
