This Loaded Chicken and Potato Casserole is amazing. Holy moly, it is good! Seasoned chicken and potatoes baked together, then topped with cheese, bacon and green onions. It is so delicious and packed with flavor!

My husband is definitely a meat and potatoes kind of guy, so you can imagine how happy he was when I whipped up this up for dinner last week. My entire family ate it in no time and loved it just as much as me. Yep, even the kiddos. 🙂

I’ve always loved a good casserole. All your favorite foods combined into one easy dish is just awesome. I think this Loaded Chicken and Potato version is my new favorite for sure!

Loaded Chicken and Potato Casserole

Seasoned chicken, diced potatoes, bacon, and cheese bake together in this ultimate dinner!

Ingredients

  • 5 medium Russet potatoes, peeled and rinsed, then cut in 1-inch pieces
  • 3 Tablespoons olive oil divided
  • 1 ½ pounds boneless skinless chicken breasts, cut in 1-inch pieces
  • 1/2 Tablespoon paprika
  • 1 Tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 to 2 cups shredded cheddar cheese
  • 1/2 cup cooked, chopped bacon
  • 2 green onions sliced thin

Instructions

  • Preheat oven to 400° F. Grease a 9×13-inch baking dish with non-stick spray.

  • Spread the cut potatoes evenly in the baking dish. Drizzle with 1 Tablespoon olive oil then toss to coat. Bake potatoes in the preheated oven for 40 minutes.

  • While potatoes are cooking, whisk together the remaining olive oil, paprika, garlic powder, salt and pepper. Add the diced chicken to the mixture and stir to coat.

  • When potatoes are finished cooking carefully remove from oven. Pour the seasoned diced chicken all over the potatoes and carefully toss to combine everything.

  • Place dish back into the oven and bake, uncovered, for 15 minutes or until chicken is cooked through. Remove from oven and sprinkle the top evenly with the cheddar cheese, chopped bacon, and onion.

  • Bake another 5 minutes, or until cheese is melted. Let stand 5 minutes before serving. Enjoy with sour cream, if desired.

    1. Breck, The chicken goes in raw. It will cook in the oven with the potatoes! 🙂

    2. Chicken goes in raw. I didn’t have green onions so I cut up a regular onion into pieces the same size as everything else. I notice some of the comments said the chicken got too dry, but mine was fine. I thought it was great.

  3. Just wondering if you peel the potatoes or just scrub the potatoes and leave the skin on?

    1. You could do either/or. I peeled my potatoes but I think it would be fine to leave the peels on, too.

      1. I thought it did too, but all the spices were the perfect amount. The only thing I changed was I baked at 395 degrees for 45 minutes (plus 5 more after putting on the cheese, bacon, and onions) and it turned out fantastic. I definitely will be making this again!

  6. I made this tonight and it’s good, but needs something. I added sweet chili sauce and that zipped it up just right. I leave the skin on the potatoes also.

    1. I cooked this at 350 degrees and after 40 minutes I stirred the casserole and cooked another 35 minutes before adding the cheese. I believe this helped the pieces of chicken to not dry out in places and seem overcooked. Also, I did not have bacon or green onions on hand so I used a couple tablespoons of Bacos and a couple tablespoons of dried chives to go with the cheese and it turned out great. Thanks for this recipe.

  16. I started cooking the chicken in a skillet until i realized it was for raw chicken. So i took it off the stove (still mostly raw) cut it up and threw it all in the oven. Is that okay to do? Lol. I’ve never stopped cooking somthing and put it in the oven. Thanks!

  23. This was a huge it with my family! As others have mentioned, I waited to put the chicken in until the potatoes had baked for 30 minutes. I did not change the temperature – kept it at 400.

  24. Just made this last night. threw it altogether just the way its written and put in the oven. I sat down and started reading comments about adding chicken later so it don’t dry out (I was worrying since I did as listed). I had no reason to worry, this came out delicious with no dry chicken. My husband and 2 boys (ages 12 & 13) and I agree this is a keeper.

  25. This turned out great. I had no issues with anything being overcooked or undercooked. I just made sure the potatoes were cut small. I added half a can of cream of mushroom soup just because I wanted some creaminess, but I am sure it is just as tasty without that addition. It was a very comforting, yummy, all-in-one meal.

    We love this recipe, but then again, we seem to never make it as well as we did the first few times. I’m not sure how we managed to mess it up. Its a casserole, not rocket-science

    Here are the adjustments we’ve made:

    *Make shredded chicken ahead of time
    *Mix potatoes in Seasoned oil, but reserve some to mix chicken in
    *Bake potatoes until done
    *Stir in Seasoned chicken, Bacon, Cheese, & onions and Bake for 5 more min

    This meal is very heavy, so we pair with a light side salad.

    Everyone of my 8 kids liked this dinner.

    This was outstanding!! My husband said he could have eaten the entire casserole himself. I used yellow potatoes & left the skin on, boneless, skinless chicken thighs & used minced onion spice in the marinade for the chicken since I didn’t have any green onions. I baked the potatoes at 375 for 45 minutes before adding the chicken. Otherwise, I followed the recipe exactly. Thank you Holly; this was so tasty.

    I have made this dish numerous times, I now add anything I have that needs using up, making it now as a type, using half a bell pepper, onions, stringy beans and butter snap peas. I am cooking the mushroom in butter to reduce them down and browning them, as I love almost burnt mushrooms, so much more flavor. using a clove or two of fresh garlic. Several friends who have tasted it now make it themselves and love it.

    I just made this tonight and my family was oohhhing and ahhhhhhing and Couldn’t get Enough! It’s delicious! Crispy potatoes, tender chicken, cheese & Bacon? You can’t go Wrong! My daughter wants me to show her how to make it, and she never asks for recipes. I only had bacon bits, but it gave it a nice smokey flavor.
