My husband is definitely a meat and potatoes kind of guy, so you can imagine how happy he was when I whipped up this up for dinner last week. My entire family ate it in no time and loved it just as much as me. Yep, even the kiddos. 🙂
I’ve always loved a good casserole. All your favorite foods combined into one easy dish is just awesome. I think this Loaded Chicken and Potato version is my new favorite for sure!

Author Holly
Ingredients
- 5 medium Russet potatoes, peeled and rinsed, then cut in 1-inch pieces
- 3 Tablespoons olive oil divided
- 1 ½ pounds boneless skinless chicken breasts, cut in 1-inch pieces
- 1/2 Tablespoon paprika
- 1 Tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 to 2 cups shredded cheddar cheese
- 1/2 cup cooked, chopped bacon
- 2 green onions sliced thin
Instructions
Preheat oven to 400° F. Grease a 9×13-inch baking dish with non-stick spray.
Spread the cut potatoes evenly in the baking dish. Drizzle with 1 Tablespoon olive oil then toss to coat. Bake potatoes in the preheated oven for 40 minutes.
While potatoes are cooking, whisk together the remaining olive oil, paprika, garlic powder, salt and pepper. Add the diced chicken to the mixture and stir to coat.
When potatoes are finished cooking carefully remove from oven. Pour the seasoned diced chicken all over the potatoes and carefully toss to combine everything.
Place dish back into the oven and bake, uncovered, for 15 minutes or until chicken is cooked through. Remove from oven and sprinkle the top evenly with the cheddar cheese, chopped bacon, and onion.
Bake another 5 minutes, or until cheese is melted. Let stand 5 minutes before serving. Enjoy with sour cream, if desired.

Love how cheesy this is! Perfect weeknight dinner!

Yummy! I am making this for dinner tomorrow night for sure 🙂 this might sound like a silly question, but do I cook the chicken before I put it in the oven or do I put it in raw?
Reply
Breck, The chicken goes in raw. It will cook in the oven with the potatoes! 🙂
Reply
Chicken goes in raw. I didn’t have green onions so I cut up a regular onion into pieces the same size as everything else. I notice some of the comments said the chicken got too dry, but mine was fine. I thought it was great.
Reply
Just wondering if you peel the potatoes or just scrub the potatoes and leave the skin on?
Reply
You could do either/or. I peeled my potatoes but I think it would be fine to leave the peels on, too.
Reply
When I make this, I scrub the potatoes and leave the skin on. It’s delish!
Reply
I’m so excited about this one! Looks delicious and easy. So happy you’re posting more now 🙂

Thanks Leigh Ann 🙂

1 tablespoon of garlic powder? That seems like a bunch.
I thought the same thing, but it works. Promise! 🙂
Reply
I thought it did too, but all the spices were the perfect amount. The only thing I changed was I baked at 395 degrees for 45 minutes (plus 5 more after putting on the cheese, bacon, and onions) and it turned out fantastic. I definitely will be making this again!
Reply
Forgot to add that I also stirred the chicken and potatoes halfway through baking.
Reply
to me there can never be enough garlic. Maybe
Reply
Can I use minced garlic instead of powder? Fresh out and making this tonight.
Reply
Lisa! Sorry, just now saw your comment! Fresh or dried minced garlic would work great. Hope you made it and loved it!
Reply
Don’t apologize, it turned out great and my family has a new favorite! 😉
Reply
I made this tonight and it’s good, but needs something. I added sweet chili sauce and that zipped it up just right. I leave the skin on the potatoes also.
Reply
Add a packet of ranch to the other seasonings, thats how I make it. Yum! My kids favorite
Reply
This looks so good ! But i’m wondering have you ever substituted another type of meat for the chicken ?
Reply
This is amazing! I also add Italian dressing, great recipe. 🙂
Reply
Can you use red skin potatoes
Reply
Eureka, Yes, definitely! 🙂
Reply
I am going to try this with some leftover chicken we have tonight. I think adding when the potatos are nearly cooked should do the trick.
Reply
this is very good !
Reply
It was and is super tasty.

I cooked this at 350 degrees and after 40 minutes I stirred the casserole and cooked another 35 minutes before adding the cheese. I believe this helped the pieces of chicken to not dry out in places and seem overcooked. Also, I did not have bacon or green onions on hand so I used a couple tablespoons of Bacos and a couple tablespoons of dried chives to go with the cheese and it turned out great. Thanks for this recipe.
Reply
Holly that was amazing!!! I added corn to ours also. Yum yum! Will definitely be cooking this again!!
Reply
Very good recipe, good instructions too. (Some I’ve come across have horrible instructions!) My family decided that this one is a keeper!
Reply
I’m making this tonight, I’m going to switch out the green onion with fresh parsley I have on hand. I needed a new chicken recipe so I’m excited about this one! Thank you!!
Reply
It’s cooking in the oven & smells awesome! I did stir it half way through baking. I just cooked the bacon & chopped it up……I know this will be a hit!
Reply
I started cooking the chicken in a skillet until i realized it was for raw chicken. So i took it off the stove (still mostly raw) cut it up and threw it all in the oven. Is that okay to do? Lol. I’ve never stopped cooking somthing and put it in the oven. Thanks!
Reply
Katie, I’m sure it would still be fine. The chicken may be a little over-cooked with the potatoes. Let me know how it turned out!
Reply
Can you make it with sharp white cheddar?
Reply
Yes! That would be delicious, I think!
Reply
It was so good with the sharp cheddar!! 🙂 thanks!!
Reply
No mention of what to do with the onion? Add it raw to the pot or fry it of first?
Reply
Hi Glenn, Yes I do, at the end of the recipe it states to add the onion along with the cheese and bacon, and cook 5 minutes longer. Thanks, hope you enjoy the recipe 🙂
Even an idiot like me can make this. Really good. Way better than the boring old chicken casserole my mum makes. It reminds me a little bit of an Italian thing I once had in a restaurant in south London but that I forget the name of!
Reply
I made this tonight! It was so super yummy, I also cooked the potatoes separately then added the chicken with 15 minutes left. it was perfect.
Reply
Loved it.. I used diced chicken thigh fillets though and was scrumptious.. Didn’t have any bacon though
Reply
Do u just put the chicken in uncooked or do u cook it first then add it and can u use chicken you use for fajitas?
Reply
Yes, chicken goes in uncooked.

amazing recipe – stumbled across your site looking for ideas for dinner and have now just cooked this one. So easy and the cooking times were spot on for me, chicken was cooked perfectly. Thanks so much I shall be checking in regularly now I’ve found you! 🙂
Reply
I’m going to attempt this in the crock pot! … We love it and I need something that will cook while we are at practice … hoping this works .. has anyone tried it?
Reply
This was a huge it with my family! As others have mentioned, I waited to put the chicken in until the potatoes had baked for 30 minutes. I did not change the temperature – kept it at 400.

Just made this last night. threw it altogether just the way its written and put in the oven. I sat down and started reading comments about adding chicken later so it don’t dry out (I was worrying since I did as listed). I had no reason to worry, this came out delicious with no dry chicken. My husband and 2 boys (ages 12 & 13) and I agree this is a keeper.
Reply
This turned out great. I had no issues with anything being overcooked or undercooked. I just made sure the potatoes were cut small. I added half a can of cream of mushroom soup just because I wanted some creaminess, but I am sure it is just as tasty without that addition. It was a very comforting, yummy, all-in-one meal.
Reply
can i add chickenbroth? do you think that will take away the flavor or add to it?
Reply
Great recipe! Only added more salt and pepper when it was on our plates!!

OMG this looks amazing! Def trying for dinner tonight 😀

My go to comfort food recipe…making this again, this time using boneless chicken thighs, they tend to have such good flavor. One of my family’s favorite dinners.
Reply
So great to hear that, Kristina! This is definitely one of my favorites too 🙂

What’s a good side to serve with this casserole?
Reply
I like to serve it with a green salad 🙂
Reply
It’s such a heavy meal, I think a light salad or maybe a cold fruit soup. you really need something light.
Reply
Making tonight! It Is one of the best recipes ever!!Reply
Made this today, folLowed the recipe exactly…my family really liked it…next time I will double this recipe …will make again for sure.Reply
Used frozen hash browns and added frozen broccoli. Delicious!

We love this recipe, but then again, we seem to never make it as well as we did the first few times. I’m not sure how we managed to mess it up. Its a casserole, not rocket-scienceHere are the adjustments we’ve made:
*Make shredded chicken ahead of time
*Mix potatoes in Seasoned oil, but reserve some to mix chicken in
*Bake potatoes until done
*Stir in Seasoned chicken, Bacon, Cheese, & onions and Bake for 5 more minThis meal is very heavy, so we pair with a light side salad.
Everyone of my 8 kids liked this dinner.

This was a great and simple recipe. And even got compliments from my husband.Reply

Easy to prepare and make. Very well received by my family. Definitely a new favorite in our home.Reply
This turned out amazing and had great flavor. My 2 year old kept asking for more. Made it as is but left off the bacon cuz i didn’t have it and used half an onion and cut the cheese amount down. AMAZING DINNER!Reply
Omg! I saw this recipe and had to try it. It was my first time making it and it came out amazing.Reply
fixing it now. can’t wait to try itReply
Absolutely delicious recipe! I will definitely be making this again and again!!!Reply
i made this and added broccoli the kids loved it!!!

This was outstanding!! My husband said he could have eaten the entire casserole himself. I used yellow potatoes & left the skin on, boneless, skinless chicken thighs & used minced onion spice in the marinade for the chicken since I didn’t have any green onions. I baked the potatoes at 375 for 45 minutes before adding the chicken. Otherwise, I followed the recipe exactly. Thank you Holly; this was so tasty.Reply
This is DELICIOUS! I added montreal chicken seasoning to the potatoes for a little more flavor. Everything came out great!!Reply
easy & delicious!Reply
I have made this dish numerous times, I now add anything I have that needs using up, making it now as a type, using half a bell pepper, onions, stringy beans and butter snap peas. I am cooking the mushroom in butter to reduce them down and browning them, as I love almost burnt mushrooms, so much more flavor. using a clove or two of fresh garlic. Several friends who have tasted it now make it themselves and love it.Reply
I just made this tonight and my family was oohhhing and ahhhhhhing and Couldn’t get Enough! It’s delicious! Crispy potatoes, tender chicken, cheese & Bacon? You can’t go Wrong! My daughter wants me to show her how to make it, and she never asks for recipes. I only had bacon bits, but it gave it a nice smokey flavor. I also added a tbsp of onion powder by mistake, but still it was a Hit! Thank YOU!!Reply
simple ingredients. makes a delicious meal. cooked in the air fryer. I got a thumbs up from hubby.Reply
