As you know from reading my blog, I’ve been “lunch challenged” in the past, and that my husband and son are picky eaters, which makes lunch even more perplexing to deal with. Even if I am okay with scrounging for leftovers in the fridge to call “lunch,” they aren’t. So, how do I pack them off with a healthy, Paleo lunch—one that they will eat? I’m also on a budget so when I saw the deals in my daily WOW Alert from Grocery Outlet, I jumped in my car so I could stock up.

Since it’s back to school time, I thought many of you may be wondering the same thing. Plus, you know that kids don’t want lunches that look different from everyone else’s. They don’t want to hear, “Ewww! What’s that?” So the test is to come up with ideas for Paleo lunches that taste great and are kid-approved.

I definitely use leftovers from supper the night before, but that only takes me so far. Now, Paleo Pretzel Dogs are a favorite around my house, and they are so easy to make and they keep well in an electric lunchbox! They are great for lunches or suppers, and they are one thing my guys will eat more than once in a week, so I make up extras to serve for lunch the next day.

I also like to plan ahead enough to use the same main ingredient, but do different things with it. For example, we love salmon, so I will make up Paleo Salmon Cakes for supper one night, and at the same time, make salmon salad that we dip veggie strips in for lunch the next day.

Mixing and matching the items below is a great start for devising easy Paleo lunches because variety is a must for kids. I could eat meatballs and rolled cold cuts filled with avocado, homemade mayo and cucumbers for lunch every day and be perfectly content. But my guys demand variety. Try different combinations of these easy Paleo lunch items until you come up with favorites you can stick with all throughout the school year…and beyond. With a little planning and creativity, you can become a Paleo lunch genius!
