    Hi, can someone help me.. I’m looking for a soy sauce that isn’t fermented.. at Mexico I usually bought a Chinese soy sauce that doesn’t have that fermented flavor compared to the kikkoman, also it’s darker and thicker, can you recommend me a soy sauce that doesn’t have that fermented flavor

    Korea has pretty strict labeling laws and if you can find a Korean soy sauce that says 양조간장 (sometimes spelled yangjo ganjang but it's better if you look on the label for the Korean letters) then it's required by law to be brewed naturally and aged at least 6 months. Korea goes further and requires soy sauce bottled to list the total nitrogen (TN) content, with "average" quality soy sauce being around 1% and premium soy sauce being 1.5% or higher. The yangjo ganjang are as good as any of those listed here and some with TN 1.5% and 1.7% compete with the highest lines from international brands.
